Experience the perfect French Toast made with Ceylon Cinnamon and Ghee butter. The wonderfully sweet and aromatic Ceylon Cinnamon gives this French Toast recipe a certain "je ne sais quoi ". Traditionally French toast is made with old bread. This is because stale bread will soak up more egg mixture without falling apart.
While it may look simple, the key thing to remember is the right heat which must be medium low heat. We burnt quite a bit of toast experimenting. Because butter can burn easily we used Ghee butter. Many people use a neutral vegetable oil and butter to prevent burning. We just didn't like vegetable oil so though Ghree butter is a better all butter alternative.

INGREDIENTS
- 2 eggs
- 1/2 cup of milk (we used half & half cream)
- 1/2 tsp. Ceylon Cinnamon powder
- 1.5 tsp. sugar
- 4 slices of bread
- 2 tbs. ghee butter
- 1/4 tsp. vanilla
- 1/16 tsp. salt
FOR GARNISH (OPTIONAL)
- 1/2 tsp. powdered sugar
- Fruit (Blueberries and raspberries)
- Maple syrup
DIRECTIONS
- Heat pan on medium low heat (dial 3.5 on a 10 dial scale of heat). Without heating the pan this will not work properly.
- Mix milk, eggs,cinnamon, salt, vanilla and sugar in a bowl or flat pan and whisk until frothy.
- Put a 1 tablespoons of ghee butter on the pan and , let it melt. About 15 seconds. We used Ghee butter which has a smoke point of 485F compared t 350F for butter. That means it will not burn.
- Take one slice of bread at a time and soak it in the egg mixture. Some say soak it for 20 minutes, but this maybe for dry old bread.
- Add the two slices of soaked bread to the pan and cook for 3 minutes exactly on medium low heat. This is the perfect time.
- After 3 minutes flip the toast and cook for 3 minutes exactly.
- Finally slip it over again and cook for 1 minute.
- Remove from heat and arrange on plate.
- Plate it - Sprinkle some powdered sugar on the bread, add two strips of Maple syrup and dress with fruit.
