The secret to perfectly balanced sweetness lies in the use of cornstarch, which ensures even distribution and prevents the sweetness from sinking to the bottom. Cornstarch also helps maintain the structure of the ice pop, keeping it firm and intact.

INGREDIENTS


DIRECTIONS


  1. In a small bowl, mix the cornstarch with 2 tablespoons of the water until smooth.
  2. In a medium saucepan, combine the grapefruit juice, remaining water, cinnamon syrup, lemon juice, and ground cinnamon.
  3. Add the cornstarch mixture to the saucepan.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and becomes slightly gel-like, about 5-7 minutes. This helps ensure that the sweetness and flavors are evenly distributed.
  5. Remove from heat and let the mixture cool slightly, pour into measuring cup to make it easier to pour into the mold.
  6. Pour the mixture into popsicle molds, filling each mold to the top.
  7. Insert the popsicle sticks and freeze for at least 4-6 hours, or until completely solid.
