This is the perfect winter meal. The warming properties of Cinnamon combined with the protein you need to survive a bitter cold, with vegetables and hearty broth to keep you hydrated.
Did you know that Cinnamon is the perfect anditote for the winter blues? It works mostly if you smell cinnamon oil, but we think even Cinnamon sticks will work to some extent to cheer you up. Besides Cinnamon sticks have many other health benefits that are fabulous.

INGREDIENTS
- 1 lb. beef chuck, trimmed and cut into into thin 1 inch long pieces
- 6 oz. udon noodles
1/2-lb. bunch bok choy, bottom trimmed, and cut into 1-inch pieces
- 1-2 tablespoon. vegetable oil
- 1 three inch Ceylon cinnamon stick
- 4 scallions chopped
- 1 tablespoon minced garlic
- 1/4 Tablespoon. minced fresh ginger
- 1/4 teaspoon. anise seeds
- 1/4 teaspoon Asian chile paste
- 4 cups water
- 1 cup low-salt chicken broth
- 1 tablespoon cup soy sauce
- 1 tablespoon rice vinegar
- 1/4 cups fried onion or Cilantro leaves for garnish.
DIRECTIONS
- Heat the oil on high heat in a deep pan. About 3 minutes. Add the beef and brown it stirring it fruqently. About 3 minutes. Remove beef into a seperate container and set aside.
- Add the cinnamon, scallions, garlic, ginger, anise seeds, and chile paste saute, stirring, for 1-min.
- Add the water, broth, soy sauce, and vinegar and meat and let it boil for 20 minutes on medium low heat, being carefully not boil it, but rather letting it simmer.
- Shortly before the soup is done, bring a large pot of water to a boil. Cook the Udon noodles according to the package directions until just tender. Drain and rinse under cold water.
- When the meat is tender, dd the bok choy to the soup and simmer until the stalks are crisp tender and the greens are very tender, 5 to 10 min. You can also steam the Bok choy separately and add it the soup.
- Stir in the noodles and let them warm through. Serve immediately, garnished with the fried onions.
