  • 1 cup grapefruit juice (preferably freshly squeezed)
  • 1/2 cup water
  • 1/4 cup cinnamon syrup (recipe )
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground cinnamon

    Optional
  • 2 tablespoons tequila
  • 1 tablespoon orange liqueur (such as Cointreau or Triple Sec)
  1. In a small bowl, mix the cornstarch with 2 tablespoons of the water until smooth.
  2. In a medium saucepan, combine the grapefruit juice, remaining water, cinnamon syrup, lemon juice, and ground cinnamon.
  3. Add the cornstarch mixture to the saucepan.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and becomes slightly gel-like, about 5-7 minutes. This helps ensure that the sweetness and flavors are evenly distributed.
  5. Remove from heat and let the mixture cool slightly, pour into measuring cup to make it easier to pour into the mold.
  6. Pour the mixture into popsicle molds, filling each mold to the top.
  7. Insert the popsicle sticks and freeze for at least 4-6 hours, or until completely solid.
