Green Beans with Ceylon Cinnamon

A green bean curry with Ceylon cinnamon from Sri Lanka. This has been modifed a little bit to make it a little lighter but still retain that creamy coconut gravy taste. Delicious with a bowl of white rice and a slice of roasted chicken or stir fried beef cubes. The Ceylon Cinnamon and the light sprinkling of spices adds the flavor and the lime juice at the end gives it a delightful fresh clean taste.

  • Serves : 3-4 people
  • 1 lb of  fresh green beans cut into one inch pieces
  • 1 Ceylon cinnamon stick
  • 10 curry leaves (optional if you can get)
  • 1 medium onion chopped
  • 1/2 tsp. of fenugreek seeds
  • 1/2 tsp. of mustard seeds
  • 1/4 teaspoon of turmeric powder
  • 1/2 cumin powder (or Sri Lankan curry powder)
  • 5.6 oz. coconut milk
  • 1 cup water
  • 1 tablespoon crushed garlic
  • 1.5 teaspoon salt
  • 1 tbs. lime juice
  • 2 tbs. coconut Oil

Optional

  • 1/2 tsp. Red chili powder
  • 2 green chilies sliced (remove seeds)
  1. Heat the oil in a saucepan over medium-high heat for about 3-4 minutes.
  2. Add the black mustards seed and saute for 3 minutes until they start popping.
  3. Add the onions, garlic, cumin, fenrgreek seeds, ceylon cinnamon stick, turmeric and curry leaves (optional) and cook until the onions are golden brown or soft. About 4 minutes.
  4. Add the green beans, 1.5 tsp salt and 1 cup of water to the mixture, stir until evenly coated.
  5. Reduce heat to medium-low, cover and cook until the beans are al dente. About 10 minutes
  6. Pour in the coconut milk and simmer on low heat for 5 minutes.
  7. Remove from heat, add the salt and stir in the lime juice just before serving.
