Experience a savory Pork Vindaloo curry made with Ceylon Cinnamon. A traditional dish from India's Goa state enhanced with Ceylon Cinnamon and Hungarian Paprika. This recipe is an ideal Keto diet with lots of fat to help you lose weight. Infused with a healthy dose of Hungarian Paprika to give it color, flavor and hotness. The addition of vinegar is a must to give it another depth of flavor. The Ceylon Cinnamon powder is subtle but mixes with the spices to create a fabulous flavor combination. You can however avoid the chilis and the hot Paprika if hot is not to your taste and instead just use sweet Hungarian Paprika. Ideally you wash Pork with fat in it. Fat does not make you fat and actually helps burn fat as you feel satiated. We got 1 lb. of Pork Belly (with juicy fat bits mostly) and 1lb of Pork shoulder with meat in it. That combination of meat is the best for this recipe.
Prep Time : 75 Minutes (incuding 60 minutes to marinate)
Cook Times : 30 minutes
Serves – 4 people
1 lbs. Pork Belly with fat chopped into cubes
1 lbs. Pork Shoulder chopped into cubes
1 tbsp. coconut oil
3 cloves
1 tsp. Ceylon Cinnamon powder
1 black Cardamom Pod
1 tsp. fresh black pepper
1/4 tsp. turmeric powder
1 tbsp. Crushed garlic
1/4 tsp. Ginger
2 tbsp. Vinegar
1 Onion
1 Medium to large sized potato
1 tbsp. Paprika
1/2 tbsp. Salt (Pork need slightly more salt)
3 Whole red chill (Optional)
1.5 tbsp. Hot Hungarian Paprika (or use Sweet Paprika)
1/2 cup water
1/2 can crushed tomato
Grind the chilies, cloves, cardamom pod with a mortar and Pestle. Then add the ground peppercorns, Ceylon Cinnamon powder, Turmeric and Paprika.
Mix the powder mixture into the pork. Add the Ginger and Garlic paste and mix well and let it sit for an hour.
Heat the pan for 2 minutes, add the coconut oil and heat for 5 minutes on medium heat.
Add the chopped and onions and sauté until golden brown
Add the pork mixture, tomatoes and one cup of water and cook on medium heat for 30 minutes or so stirring occasionally. If you don't too much gravy, then do not add the half a cup of water. Maybe a 1/4 cup or none is better suited for you.
Serve with rice or Broccoli rice and another vegetable dish.
